There are four main reasons for choosing Iranian pistachios over competitors:

there are many different varieties (cultivars)of Iranian pistachio , of which the following four are the most prevalent : Fandoghi (40% of pistachio orchards), Kalleh Ghouchi (24%), Akbari (12%) and Ahmad Aghaei (9%) , with the last two on the rise . each variety has its own differing properties and flavor.

Iranian pistachios have the capacity to be roasted at around 180 c (hot air steam temperature). good roasting brings out the unique flavor of the pistachios , while also eliminating any possibility of bacterial contamination . It is obvious that some non - Iranian pistachios that lack the high unsaturated oil content of Iranian pistachios, cannot be roasted at more than 120c, these pistachio neither have the appetizing taste nor aroma of roasting, or the bacterial elimination of proper roasting.

Over a long period, European consumers have a preference for the taste of Iranian pistachios. All four commercial varieties of Iranian pistachios each have a rich, unique and distinctive flavor. In this regard Iranian pistachios offer a combination of varied, unparalleled and unique flavors, which gives the consumer choice and variety.

The Iranian Pistachio industry
Pistachios have been cultivated in Iran for thousands of years. Commercial cultivation of pistachios started expanding in Iran about one hundred years ago and production and exports have grown ever since. Currently, annual pistachio production in an "on" year is up to 280,000 metric tons, from orchards in Kerman, Yazd, Khorasan, Fars, Semnan, Markazi and some other provinces. Kerman has the dominant share of orchards and production. Improvements in the planting , cultivation and harvesting of pistachio orchards , as well as the increased mechanization of processing plants has insured better yields for producers and higher quality pistachios for customers . Most pistachio exports are in bulk: raw dried pistachios, roasted pistachios and pistachio kernels . Pistachios are exported according the buyers' requirements and standards, provided they meet the minimum Iranian national standards.
